This quick chicken wrap is the kind of meal that fits easily into a busy day. It is filling without being heavy, crisp from fresh vegetables, and creamy enough to feel satisfying. Serve it for a simple lunch, a light dinner, or pack it for a picnic when you want something easy to eat with no fuss.
Each ingredient has a clear role here. The lavash keeps everything together while staying soft and flexible. Smoked chicken fillet brings savoury flavour and makes the wrap substantial with almost no extra cooking. Bell pepper adds sweetness and crunch, radish gives a peppery freshness, and cabbage brings body and a little bite. Yogurt ties the filling together with a cool, tangy note, while parsley lifts the whole wrap with a clean herbal finish.
The main thing to watch is texture. Slice the radish thinly so it softens slightly once mixed with yogurt, and season that mixture lightly so the dressing tastes lively rather than flat. Shred the cabbage fine, salt it, and gently crush it with your hands until it relaxes. That small step takes away raw toughness and helps the cabbage sit neatly inside the wrap instead of springing out.
When you cut the pepper and chicken into even strips, the filling becomes easier to roll and easier to eat. Try not to overfill the lavash. It is best soon after assembling, when the vegetables are still crisp and the lavash has not absorbed too much moisture. If needed, keep the prepared filling chilled and assemble just before serving. Once rolled, it is best eaten the same day, though it can be refrigerated for up to 12 hours, tightly wrapped, with the understanding that the bread will soften as it sits.
