Carrot and bell pepper add sweetness and colour, onion sharpens the flavour right at the end, and dill with parsley brighten everything so the soup tastes clean rather than dense.

The main thing to watch is the timing of each vegetable. Start with the potatoes so they can soften in the seasoned water, then add the salmon before the potatoes are fully cooked so the flavours have a little time to come together. The carrot goes in when the potatoes are nearly tender, the pepper after that, and the onion only for a few seconds at a boil. If you want to adapt it, you can swap canned pink salmon for another canned salmon with a similar texture. Red bell pepper can stand in for any sweet pepper, and if you are short on herbs, use only dill or only parsley rather than skipping them altogether. Waxy potatoes will hold their shape more neatly, but floury ones will still make a comforting bowl with a slightly fuller broth.

Serve the soup hot in shallow bowls with some of the herbs scattered over the top just before it reaches the table. Because the broth is delicate, it pairs well with simple sides such as rye bread, boiled grains or a crisp cucumber salad. Keep the seasoning restrained at first, then adjust with salt at the end so the fish and herbs remain the clearest flavours.
