This peach cottage cheese bake is the kind of breakfast that feels a little more special than porridge, yet is still easy enough for an ordinary morning. It sits somewhere between a light cheesecake and a tender breakfast pudding, with juicy fruit tucked underneath and a softly set, spoonable filling above. Serve it warm for breakfast or brunch, or let it cool and cut it into neat portions for a make-ahead option during the week.
Each ingredient has a clear job here. Cottage cheese gives the bake its gentle tang and creamy body, while eggs help it set so the slices hold together once cooled. Oats add a little texture and make the mixture feel more substantial without turning it heavy. Sugar sweetens the filling and helps the top colour lightly in the oven, and peaches bring fragrance, softness and a fresh contrast to the richer base.
The main thing to watch while cooking is the texture. Mix until the eggs, sugar and cottage cheese are evenly combined, but there is no need to overwork it. When baking, look for edges that are set and a centre that no longer looks wet, though it may still have a slight wobble. The fruit will release some juice as it cooks, so allow the bake to rest for a few minutes after it comes out of the oven; this helps it settle and makes serving easier.
This recipe is flexible in a useful, everyday way. If peaches are not in season, you can use plums, apricots or pears, as the original idea allows for other fruits with a similar soft finish in the oven. If you prefer a less sweet breakfast, reduce the sugar slightly to suit your taste, keeping in mind that the fruit itself may vary in sweetness. Standard rolled oats work best here, but finer oats will also blend in well.
To serve, bring it to the table warm in the baking dish for a relaxed family breakfast, or portion it once cooled for a cleaner finish. It works well on its own, since the fruit already gives moisture and sweetness, but you can add a spoonful of plain yogurt if you like something cooler alongside. For brunch, pair it with fresh seasonal fruit and tea or coffee.
Leftovers keep well, which makes this especially practical. Once cool, cover the bake and refrigerate it for up to 3 days. You can eat it cold straight from the fridge, or warm individual portions gently before serving. If you know you are making it ahead, allow it to cool fully before storing so condensation does not collect and soften the top too much.
