Step 1/11
Wash the cucumbers and soak the cucumbers for 1 hour in cold water together with the pickling herbs. Let the cucumbers soak to help remove excess air from the fruit.

Mix the tomato juice, water, salt, sugar and vinegar in a saucepan and bring the mixture to a boil. Make a tomato marinade.

Put the garlic and spices into clean, sterilised jars. Distribute the garlic, coriander seeds, cloves, black peppercorns and chilli as desired.

Pack the cucumbers tightly into the jars. Fill the jars firmly so the cucumbers hold their shape in place.

Pour the hot tomato marinade over the cucumbers and leave the jars for 10 minutes. Let the vegetables warm through well.

Drain the tomato marinade back into the saucepan and bring the tomato marinade to a boil again. Pour the tomato marinade back into the jars and leave the jars for another 5 minutes.

Drain the marinade again and boil the marinade for the third time. At the same time, boil the sealing lids in a small pan.

Pour the tomato marinade into the jars with cucumbers. Fill the jars to the top.

Add 2 teaspoons of vinegar to each jar and seal the jars with the lids. Roll the jars shut immediately.
Step 10/11
Turn the jars upside down and leave the jars that way until completely cool. Let the seal set as the jars cool.
Step 11/11
Store the jars in a dark, cool place. Keep the preserved cucumbers for winter storage.
