Raw 85% dark chocolate with blueberries and hemp seeds, from Lovechock in Amsterdam — the most texturally interesting bar in the range, and one of the more unusual combinations in chocolate generally.
Why the combination works
An 85% bar is dry and astringent by nature, with very little sugar to round it off. Dried blueberries bring acidity and small bursts of concentrated fruit, which does what sugar would otherwise do — but by contrast rather than by masking. Hemp seeds bring a soft, oily crunch and a green, almost grassy note that sits surprisingly well against raw cacao's own fruitiness.
The result is a bar you chew rather than melt, which is unusual for high-percentage chocolate and makes it far more approachable than a plain 85%.
What the percentage means
The proportion of the bar from the cacao bean — cocoa mass plus cocoa butter. It is not a quality score; almost all the remainder is sugar. At 85% there is very little, which is why the bar tastes dry and intense rather than sweet.
Raw cacao
Lovechock work with unroasted beans — only the shells are briefly heated, for hygiene, while the core stays raw. Roasting creates the deep toasted flavour most of us call "chocolate", so raw cacao is brighter, fruitier and more acidic. Here that plays directly into the blueberry.
On hemp seeds
Hulled hemp seeds are a food, not a drug — they contain no meaningful THC and have no psychoactive effect whatever. They are simply a seed with a mild nutty flavour, a good fat profile and useful protein. The question comes up often enough to be worth answering plainly.
