A 73% dark chocolate bar from Chocolates Artesanos Isabel: cocoa, cocoa butter, cane sugar and soy lecithin, all Fairtrade certified and organic. 80 g.

You are buying one 80 g bar. You may see "It comes in boxes of 10 packs" attached to this product elsewhere — that is the wholesale case quantity, written for shops.

CONTAINS SOY — and the 65% does not

Worth flagging at the top, because it runs against what people expect.

This bar contains soy lecithin. The 65% bar from the same maker does not — its ingredients are cocoa, cocoa butter, cane sugar and vanilla, with no emulsifier at all.

Almost everybody assumes the darker, more intense chocolate is the purer one. Here it is the other way round. If you are avoiding soy, buy the 65%.

It is gluten-free and milk-free, and suitable for vegans.

What soy lecithin is doing

Not padding. Lecithin is an emulsifier that reduces the viscosity of liquid chocolate, which lets a maker use less cocoa butter — the most expensive ingredient — while still getting the chocolate to flow through machinery and take a good temper.

The amount is tiny, typically well under half a per cent. It is a legitimate technical ingredient rather than a cheapening one, and it is in the overwhelming majority of chocolate sold anywhere. It simply matters if you are one of the people who has to avoid soy, in which case a fraction of a per cent is still a fraction of a per cent.

What 73% means

The combined proportion of cocoa solids and cocoa butter. Which makes this bar roughly 27% sugar, against about 35% for the 65% — that is the difference you actually taste.

The number says nothing about quality. A high percentage of poor cocoa is worse than a lower percentage of good cocoa, and fermentation on the farm in the days after harvest determines more about how chocolate tastes than almost anything that follows.

Note also that this bar has no vanilla, where the 65% does. Vanilla in dark chocolate rounds off harsh edges; without it, you taste the beans more directly — which is a choice, and which flatters good cocoa and exposes poor cocoa.

The certifications

FLO-Fairtrade: a guaranteed minimum price to farmer organisations plus a social premium the cooperative decides how to spend — meaningful in an industry with well-documented labour problems. CAAE: the Andalusian organic certifier. FSC: the cardboard, from responsibly managed forests.

An orphan footnote

The producer's ingredient list carries a marker for "(3) Km0 raw material (local production)" that is never applied to anything. Cocoa does not grow in Spain.

IF YOU AVOID SOY - BUY THE 65% INSTEAD

This bar contains soy lecithin. The 65% from the same maker does not: its ingredients are cocoa, cocoa butter, cane sugar and vanilla, with no emulsifier at all.

Almost everyone assumes the darker chocolate is the purer one. Here it is the other way round, and it is exactly the kind of thing that catches somebody out at a shelf.

NO VANILLA - WHICH CHANGES HOW IT TASTES

Unlike the 65%, this bar contains no vanilla. Vanilla in dark chocolate rounds off harsh edges and softens bitterness; without it you taste the beans more directly.

That is a deliberate choice, and it cuts both ways: it flatters good cocoa and exposes poor cocoa. Taste this one alongside the 65% and the difference is not only the sugar.

HOW TO TASTE IT

Room temperature - ten minutes out of a cold room. Chocolate's aromatics release only as the cocoa butter melts towards body temperature.

Break a piece and listen for a clean sharp snap; a dull bendy break means it has been warm and re-set.

Let it melt on the tongue rather than chewing.

At 73% expect real bitterness at the front. If you normally eat milk chocolate, start with a small piece.

STORAGE - THE MAKER SPECIFIES 14 TO 20 DEGREES

Dry, dark, away from anything aromatic.

NOT THE FRIDGE - too cold and too humid. Condensation dissolves surface sugar and leaves a grey film, and cold chocolate tastes of almost nothing. If summer leaves no cool cupboard, seal it in an airtight box and let the box warm before opening.

Cocoa butter absorbs odours from the air, so keep it away from coffee and spices - which matters more with a bar this plain, because there is nothing to mask it.

WHITE MARKS

Fat bloom is a pale greasy film - cocoa butter recrystallised after warming. Sugar bloom is a rougher gritty crust, usually from a fridge. Both harmless.

DOGS - THIS IS ONE OF THE WORST

Theobromine is toxic to dogs and dark chocolate contains far more of it than milk chocolate. A 73% bar is among the most dangerous things in a kitchen cupboard for a dog. If one eats some, phone a vet with the dog's weight and the amount and cocoa percentage.

WHAT TO DRINK WITH IT

Black coffee, a tawny port, an oloroso sherry, or a robust red. Nothing sweeter than the chocolate, which makes it taste thin and bitter.

Frequently asked questions

Does it contain soy?

Yes - soy lecithin. And worth knowing that the 65% bar from the same maker does not: its four ingredients are cocoa, cocoa butter, cane sugar and vanilla, with no emulsifier at all. Almost everybody assumes the darker chocolate is the purer one, so this catches people out. If you avoid soy, buy the 65%.

What is the soy lecithin for?

It is an emulsifier that reduces the viscosity of liquid chocolate, which lets a maker use less cocoa butter - the most expensive ingredient - while still getting it to flow through machinery and temper well. The amount is tiny, usually well under half a per cent, and it is in the overwhelming majority of chocolate sold anywhere. It is a legitimate technical ingredient; it only matters if you have to avoid soy.

Is 73% better than 65%?

Less sweet, not better. The percentage is cocoa solids plus cocoa butter, so 73% cocoa is roughly 27% sugar against about 35% for the 65%. Quality is a separate question entirely - a high percentage of poor cocoa is worse than a lower percentage of good cocoa.

Why does this one taste sharper than the 65%?

Two reasons. Less sugar, obviously. And no vanilla - the 65% contains it and this does not. Vanilla in dark chocolate rounds off harsh edges and softens bitterness, so without it you taste the beans more directly.

Am I buying one bar or ten?

One 80 g bar. Listings for it often end with "It comes in boxes of 10 packs", which is the wholesale case quantity written for shops.
