How the sweetness works
Dates are the base of the filling and they are doing the job that syrup or sugar does in a conventional bar. A date is roughly two-thirds sugar by weight, so "no refined sugar" is accurate but should not be read as "low in sugar" — it means the sugar arrives inside a whole fruit, along with its fibre and potassium, rather than as a refined ingredient. That is a real difference and a modest one. It is a sweet bar, and it is meant to be.
Cashew butter provides the fat and the creaminess. Together with the fibre from the dates, that is what makes a bar like this more filling than a chocolate bar of the same size.
About the "white chocolate"
