Organic chia seeds, 200 g, from Dragon Superfoods. Salvia hispanica is a small member of the mint family from central Mexico and Guatemala, cultivated by the Aztecs and Maya long before it became a health-food staple — the Aztec name chian simply means “oily”.

The gel is the interesting part. Chia seeds are coated in soluble fibre — mucilage — which absorbs many times its own weight in water and forms a transparent gel within minutes. That gel is why chia thickens a pudding without cooking, why it can replace egg as a binder in baking, and why it slows the emptying of the stomach.

And it is also a genuine safety point that nobody prints. Never eat a spoonful of dry chia and then drink liquid. There is a documented case of oesophageal obstruction caused exactly that way: the seeds expanded in the oesophagus rather than the stomach and had to be removed endoscopically. Always soak chia in liquid before eating it, or eat it in something already wet. Sprinkled dry onto a salad is fine; a dry spoonful chased with water is not.

An honest correction about omega-3. Chia is genuinely rich in alpha-linolenic acid, and ALA is an omega-3. But it is not the omega-3 that most of the health evidence concerns — that is EPA and DHA, the long-chain forms found in oily fish. The human body converts ALA into EPA at a rate usually estimated below 10%, and into DHA at a rate closer to 1%. So chia is a good source of ALA, and it is not a substitute for oily fish or an algae oil supplement. If you eat no fish, that distinction matters.

What it is unambiguously good at: fibre. Chia is exceptionally high in it, which is where most of its practical benefit sits, and where most people's diets are short.

Uses: chia pudding (three tablespoons to a cup of milk, stirred twice, left overnight); one tablespoon plus three of water as an egg replacer; stirred into porridge, yoghurt or smoothies; sprinkled over salads.

ALWAYS SOAK BEFORE EATING
Never swallow a dry spoonful and then drink liquid. Chia absorbs many times its weight in water and there is a documented case of it expanding in the oesophagus and needing endoscopic removal. Soaked in liquid, or stirred into something already wet, it is perfectly safe.

CHIA PUDDING
Three tablespoons to one cup of milk or plant milk. Stir, wait five minutes, stir again to break up clumps, then refrigerate overnight. The second stir is what stops it setting in lumps.

AS AN EGG REPLACER
One tablespoon of chia plus three tablespoons of water, left ten minutes to gel, replaces one egg in most baking.

IN PORRIDGE, YOGHURT AND SMOOTHIES
A tablespoon thickens noticeably within minutes.

INTRODUCE GRADUALLY
It is very high in fibre. Going from none to several tablespoons a day causes bloating. Build up, and drink enough water.

STORAGE
Cool, dark and airtight. High in unsaturated fat, so it will eventually go rancid.
