Organic sweet paprika, ground, in a 30 ml jar from Nomie — the French spice house whose name means, roughly, the taste of spices.

The one thing to know about paprika

It burns almost instantly, and burnt paprika is bitter and cannot be rescued.

Paprika is ground dried sweet pepper, and it contains a good deal of natural sugar. Sugar caramelises and then scorches at temperatures that other spices shrug off, which is why paprika added to a hot dry pan turns acrid in seconds and takes the whole dish with it.

The technique is simple: take the pan off the heat before you add it. Let the temperature drop for a moment, stir the paprika into the fat, then return it to a low heat. Hungarian cooks do this instinctively, and it is the single difference between a good goulash and a bitter one.

Why to add it to fat at all

Because most of what makes a spice taste of anything is fat-soluble rather than water-soluble. Stir ground paprika into a watery stew and much of its flavour stays locked in the powder; stir it into warm oil or butter for thirty seconds first and it releases properly and colours the whole dish. This is true of nearly all ground spices and it is the most useful single technique in spice cookery.

Sweet, smoked or hot?

Sweet is the base: mild, fruity, faintly sweet, and used by the spoonful rather than the pinch. It is what goes into goulash, into paprikash, onto roast potatoes and into a rub.
Smoked is a different ingredient — peppers dried over oak fires — and is used sparingly for its smoke.
Hot is the same pepper with the heat left in.

The 30 ml jar

The right size if you use paprika occasionally. Ground spices lose their aroma steadily — six months to a year is realistic — so a small jar you finish beats a large one that fades. If paprika is a weekly ingredient in your kitchen, take the 60 ml.

Storing it

Away from heat, light and steam. The rack above the cooker is the worst place in the kitchen and the place everyone puts them.

TAKE THE PAN OFF THE HEAT BEFORE ADDING PAPRIKA. This is the single most important thing on this page. Paprika is ground sweet pepper and contains real sugar, so it scorches in seconds at temperatures other spices tolerate — and burnt paprika is bitter and cannot be rescued.

The method: soften your onions, take the pan off the heat, let it cool for a moment, stir the paprika into the fat, then return to a LOW heat.

BLOOM IT IN FAT. Most of what makes a spice taste of anything is fat-soluble rather than water-soluble. Thirty seconds in warm oil or butter releases far more flavour than stirring it into a watery stew, and it colours the whole dish.

Use it by the spoonful, not the pinch. Sweet paprika is mild, and dishes like goulash use tablespoons.

GOOD IN: goulash and paprikash, chicken and potato dishes, rubs for meat and fish, tomato sauces, roasted vegetables, eggs, and stirred into soured cream or yoghurt.

On already-cooked food: it is fine sprinkled over eggs, hummus or potatoes at the end — raw paprika is pleasant, it is only heat that ruins it.

STORAGE: away from heat, light and steam. The rack above the cooker is the worst place in the kitchen, and the place almost everyone puts their spices.

Never shake the jar directly over a steaming pan — steam gets in and cakes the powder. Spoon it into your hand first.

Ground spices fade. Six months to a year is realistic for full flavour; after that it is still safe but increasingly dull. If it smells of nothing, it will taste of nothing.

What is the difference between sweet, smoked and hot paprika?
