How to make it well
Fruit infusions want boiling water and a long steep — five to eight minutes at least. Unlike tea, they do not turn bitter with time, so a forgotten cup is only a stronger cup. Cover it while it steeps: the aromatics leave with the steam, and a saucer over the mug makes a real difference.
Cold brew is where this one belongs. A heaped spoonful per litre in a jug of cold water, overnight in the fridge, strained in the morning — rounder and less sharp than the same infusion cooled from hot. Peach and apple over ice, with a sprig of mint, is a genuinely good thing to hand someone in August, and it is a real alternative to squash for children and to wine for an adult who is not drinking.
One practical note
Fruit infusions are acidic, and acid softens tooth enamel. If a child drinks this often, treat it as you would juice: with a meal rather than sipped through the afternoon, water afterwards, and no brushing for at least half an hour — brushing acid-softened enamel wears it away.
