Cold milk loosens the roux gradually and turns it into a sauce instead of a paste. A little nutmeg adds warmth in the background, and salt brings the whole mixture into balance. With so few ingredients, careful cooking matters more than extra additions.

The main thing to watch is the texture from the very beginning. When the butter and flour are stirred together, keep mixing well so no dry pockets remain and no lumps form. Once the milk goes in, pour it little by little rather than all at once, whisking or stirring constantly. Bring the sauce up to a boil, then lower the heat and keep stirring as it thickens. It is ready when it looks glossy and smooth and coats a spoon to the consistency you need for your dish.

Whole milk will give the fullest result, but other plain milk options can work if that is what you have, though the sauce may be a little less rich. Serve béchamel straight away while it is warm and fluid. Spoon it into lasagne layers, fold it through cooked vegetables, pour it over baked dishes before they go into the oven, or use it as a soft finishing sauce over cooked meat, fish or pasta. It should support the dish rather than dominate it, so pair it with ingredients that welcome a creamy, delicate coating.

If you have leftovers, let the sauce cool, then keep it in a sealed container in the fridge for up to 2 days. It will firm up as it chills, which is normal. Reheat it gently over low heat, stirring often; if it seems too thick, loosen it with a small splash of milk until smooth again. Avoid high heat, which can catch on the bottom and spoil the texture.
