The truffle
Tuber melanosporum, the black winter truffle — the Perigord truffle, though most of Europe's crop now comes from Spain. The maker names Sarrión, in Teruel, which has the largest planted area of truffle oaks anywhere in the world. It is a genuinely remarkable piece of agricultural history: an area that was emptying out found that its poor limestone soil and hard winters were nearly perfect for a fungus that had previously only been foraged.
The smell is the point. Deep, peppery, earthy, faintly of garlic and wet stone. It is one of the most distinctive aromas in food and it is almost entirely aroma — truffle has very little taste in the mouth. What you experience is retronasal smell, which is why truffle is used in tiny quantities and why it fades so fast.
An honest word about truffle products in general
This is worth knowing whatever you buy. The large majority of truffle oils, truffle salts and truffle crisps on sale contain no truffle at all. They are flavoured with 2,4-dithiapentane, a single synthetic compound that mimics the dominant note of truffle aroma — which is why so much "truffle" food tastes identical, and identically one-dimensional. Real truffle is complex; the synthetic is one loud note.

The reliable way to check any truffle product, including this one, is the ingredient list: look for "truffle" or Tuber melanosporum with a percentage, rather than "truffle aroma" or "flavouring". We would rather tell you how to check than simply assure you.
