Early-harvest extra virgin olive oil from the Galega olive, Portugal's own variety, in a 100 ml tin. Fruity, with a note of green apple, a silky texture and a gentle peppery finish. Acidity 0.2°.

Galega

Galega Vulgar is the traditional Portuguese olive — the variety that dominated the country's groves for centuries before Spanish and Italian cultivars arrived. The fruit is small, the trees are slow and the yields are low, which is exactly why it lost ground to more productive varieties and why it is now something of a speciality.

The oil is milder and rounder than the aggressive Picual and Cornicabra oils Portugal now also produces — fruity, faintly sweet, with the apple note the description mentions and a soft rather than fierce pepperiness. If strong Spanish oils have ever felt harsh to you, Galega is the one to try.

What "acidity 0.2°" actually tells you

This number is widely printed and almost universally misunderstood. It has nothing to do with how the oil tastes — you cannot taste 0.2% free acidity, and oil is not sour.

Free acidity measures free fatty acids, which are produced when the fat in the olive breaks down. That breakdown happens when fruit is bruised, when it sits too long between picking and pressing, when it is damaged by the olive fly, or when it is pressed badly. So acidity is a measure of how well the fruit was handled.

EU law allows extra virgin olive oil up to 0.8%. At 0.2° this oil is at a quarter of the legal ceiling, which tells you the olives were healthy and went from tree to mill quickly. That is a genuinely meaningful number, correctly understood.

Early harvest

Picking olives while still green, before they ripen to black, gives markedly less oil per kilo of fruit — a real economic cost. What you get in return is more polyphenols, which means more of the bitterness and the peppery catch at the back of the throat, and considerably better keeping quality, since polyphenols are what protect the oil from going rancid.

That peppery catch is not a fault. It is caused by oleocanthal, and people who are unfamiliar with fresh oil often think something is wrong with it. It is the taste of a young, well-made oil, and it fades as the oil ages.

Why a tin, and why 100 ml is not merely a gift size

Light is the main enemy of olive oil — it drives oxidation faster than air or moderate heat. A tin blocks it completely, which a clear glass bottle does not.

And a small format solves the real problem with good oil: once opened, oxygen gets to it every time you pour, and a large bottle spends months half-empty and slowly deteriorating. A 100 ml tin gets finished while it is still good.

USE IT RAW

A fine early-harvest oil at 0.2 acidity is wasted in a frying pan. Heat destroys the aromatic compounds and the polyphenols you paid for, and any decent everyday oil will fry just as well.

Use this at the end, uncooked: over grilled fish, on bread, over tomatoes, on boiled potatoes, into a soup at the table, over grilled vegetables, on white beans. Drizzled onto a caldo verde just before eating.

It is also very good simply with bread and flor de sal.

TASTE IT PROPERLY ONCE

Worth doing at least once so you know what you have. Pour a little into a small glass, cup your hand over the top and warm it for a moment, then smell it. Sip a small amount and draw air in over it through your teeth.

You should get: fruit and cut grass in the nose, a bitterness in the middle of the tongue, and a peppery catch at the back of the throat that may make you cough. All three are marks of a good young oil.

THE COUGH IS NOT A FAULT

That throat catch comes from oleocanthal and it is the sign of a fresh, polyphenol-rich oil. People used to supermarket oil often think something is wrong. It softens as the oil ages.

STORAGE

Cool, dark, sealed, away from the hob. The tin already deals with light, which is the biggest enemy; heat and air are the other two.

Do NOT refrigerate. Olive oil clouds and solidifies when cold - it is harmless and reverses, but there is no benefit and it condenses moisture in the tin.

Do not decant it into a pretty clear glass bottle on the windowsill. That undoes the entire point of the tin.

USE IT WITHIN A FEW MONTHS OF OPENING

Oxygen reaches the oil every time you pour. This is why the 100 ml format makes sense: you will finish it while it is still good, rather than nursing a half-empty litre for a year.

HOW TO TELL IT HAS GONE

Rancid oil smells like old crayons, putty or stale nuts, and tastes flat and greasy with none of the pepper. It is not dangerous, but it is not worth eating.

What does 0.2 degrees acidity mean?

It makes me cough. Is something wrong with it?

No - that is the mark of a good one. The catch at the back of the throat comes from oleocanthal, a polyphenol abundant in fresh early-harvest oil. It fades as oil ages, which is why supermarket oil rarely does it and why people who meet it for the first time think it is a fault.

Can I fry with it?

You can, but it is a waste. Heat destroys the aromatics and the polyphenols that make this oil worth its price, and a cheaper everyday oil fries identically. Keep this for raw use - on bread, fish, tomatoes, soup, vegetables.

What is special about Galega?

It is Portugal's own traditional olive, which dominated the country's groves before more productive Spanish and Italian varieties arrived.
