The oil is the recipe
Twenty per cent extra virgin olive oil is a lot for a cracker. It is the reason these snap rather than bend, the reason the herbs come through so clearly, and the reason they taste of something on their own — fat is what carries aroma, and the herb compounds here are all fat-soluble.
The herbs are infused into the oil rather than sprinkled on top, which is a meaningful difference. Rosemary's camphor notes, thyme's thymol, oregano's carvacrol and basil's linalool all dissolve into oil far better than they survive being dusted onto a surface. It is why the flavour is even through the cracker instead of concentrated in the first bite.
The herbs, precisely
Rosemary, thyme, oregano and basil — four herbs, about 1% of the finished cracker. Listings for this product commonly name only three, leaving out the oregano.
These are the herbs of the Mediterranean hillside, and they belong together for a reason older than cooking: they are all aromatic evergreens from the same dry, sunny, stony habitat, and they produce those oils to survive heat and deter insects. What we taste as seasoning is a plant's defence chemistry.
A note on the name
These are sold by the maker as Galletas Veganas Artesanas con Hierbas Aromáticas; the English name here is our own translation, with the brand name kept as it is.
