Flor de sal harvested by hand from the salt pans of Rio Maior, in the Ribatejo — the thin crust of crystals that forms on the surface of the brine on still, hot days, skimmed off before it can sink.

The strangest salt pans in Portugal

Rio Maior is about thirty kilometres from the sea, and there is no river of salt water anywhere near it. The salt comes from underground.

Beneath the valley lies a deposit of rock salt, the remains of an ancient sea. A spring rises through it, and by the time the water reaches the surface it is roughly seven times saltier than seawater — so concentrated that it evaporates into salt far faster than coastal pans manage.

That water is channelled into a dense cluster of small wooden-walled pans, packed together in a way that looks nothing like the wide open salinas of the Algarve. Salt has been worked here since at least the twelfth century, and the site is documented from 1177. The pans are still owned in the traditional way, in fractional shares passed down families.

A correction worth making: this is not mined salt

Rio Maior salt is often described as "collected from a rock salt mine". That confuses the source with the harvest, and the distinction is the whole point of flor de sal.

The brine comes from a rock salt deposit underground. The salt is harvested from the surface of open evaporation pans, in the sun and wind, by hand, with a wooden rake. Nobody goes down a mine. Flor de sal that came out of a mine would not be flor de sal.

You will also see a line attached to this product saying it is "now available on the faire platform". Faire is a wholesale marketplace and that sentence is written for shops, not for you.

What flor de sal actually is, and why it costs more

On a hot, still day with a light breeze, a delicate crust of crystals forms on the surface of the brine. It floats — held up by surface tension — and if left it will sink and join the coarse salt at the bottom.

Flor de sal is that crust, lifted off by hand before it sinks. It cannot be harvested on a windy day, or a humid one, or after rain. A whole season may yield very little. That is the reason for the price: it is a small fraction of the pan's output and every gram of it is taken by hand.

The crystals are flaky and pyramidal rather than cubic, they hold more residual moisture, and they dissolve slower on the tongue — which is why flor de sal delivers a distinct burst of salinity where table salt just tastes uniformly salty.

How to use it: at the end, never in the pot

This is the only rule that matters. Flor de sal is a finishing salt. Dissolved into a stew or a pan of pasta water it becomes ordinary salt and you have wasted your money.

Sprinkle it on food after cooking, with your fingers, so it stays as crystals you can feel.

THE ONE RULE: FINISH WITH IT, DO NOT COOK WITH IT

Flor de sal dissolved into a stew, a sauce or pasta water is simply sodium chloride, identical to the cheapest salt in the shop, and you have paid a great deal for nothing.

Everything worth paying for is in the crystal: the flaky texture, the slight moisture, the way it dissolves slowly and gives a distinct burst of salinity rather than a uniform salty background.

Add it at the table, or the moment food leaves the heat.

USE YOUR FINGERS

Not a grinder - grinding destroys the flakes and turns it into ordinary fine salt.

Not a shaker either; the crystals are damp and irregular and will clog it.

Pinch it between thumb and fingers and scatter from a height of about twenty centimetres. The distance is not affectation - it is how you get an even scatter instead of a heap in one spot.

WHERE IT IS BEST

Grilled fish, especially sardines and robalo. Steak, after resting. Tomatoes with olive oil. A fried egg. Boiled potatoes. Grilled vegetables. Avocado. Good bread with butter.

Also, and it surprises people: dark chocolate, caramel, and sliced ripe melon or watermelon.

STORAGE

Airtight, dry, away from steam. Flor de sal keeps some residual moisture, and near a hob or kettle it absorbs more and cakes into a block.

A small lidded dish or a salt pig near the stove, refilled from the main container, is the practical arrangement.

It does not go off. Salt has no shelf life in any meaningful sense.

IF IT CAKES

Break it up with a fork or your fingers. It is moisture, not spoilage, and nothing is lost.

IS IT HEALTHIER THAN TABLE SALT?

No, and we will not pretend otherwise. Flor de sal contains trace minerals that refined salt does not, but in quantities far too small to matter nutritionally. It is chemically almost all sodium chloride and counts exactly the same towards your salt intake. Buy it for the texture and the taste, which are real, and not for health, which is not.

Why is it so much more expensive than ordinary sea salt?

Because it is a tiny fraction of what a salt pan produces and all of it is taken by hand. Flor de sal is the delicate crust that forms on the surface of the brine on hot, still days, skimmed off before it sinks. It cannot be harvested when it is windy, humid or wet, and a whole season may yield very little.

Can I cook with it?

You can, and you should not. Dissolved into food it is chemically identical to the cheapest salt on the shelf, and everything you paid for - the flake, the moisture, the slow dissolve - is gone. Use ordinary salt in the pot and this at the end.
