An organic extra virgin olive oil from an early harvest, hand-picked and cold pressed. Those three words on a label are the ones that actually mean something, so here is what each of them buys you.

Early harvest — the thing worth paying for

Olives can be picked green, at the turn, or fully ripe and black. Pick them late and you get more oil per tree, a mild and buttery result, and a bigger margin. Pick them early, while they are still green, and you get roughly half the yield — which is exactly why early-harvest oil costs more.

What you get in exchange is polyphenols. Green olives are far richer in them, and polyphenols are what produce the two sensations people mistake for faults the first time they taste a serious oil: a grassy bitterness on the tongue, and a peppery catch at the back of the throat that can make you cough. That catch has a name — it comes largely from oleocanthal — and in olive oil it is a quality marker, not a defect. Polyphenols are also the oil's own preservative: they are what keeps it from going stale, and they are what fade first as it ages.

So an early-harvest oil is at its best young. This is not a bottle to keep for a special occasion. Open it and use it.

Hand-picked, cold pressed

Hand-picking means the fruit arrives whole rather than bruised, and bruised olives start fermenting before they reach the mill. Cold pressing — extraction below 27°C — matters because heat drives up yield while destroying exactly the aromatic compounds and polyphenols you just paid extra for.

And extra virgin is a legal grade, not a compliment: it means the oil is mechanically extracted, has free acidity below 0.8%, and has passed a sensory panel with no detectable defect. Anything that fails on taste is not extra virgin, however it was made.

How to use it

This is a finishing oil first. Its character is destroyed by the pan and wasted in a long braise.

Raw, over grilled fish, boiled potatoes, white beans, tomatoes, or a bowl of caldo verde at the table.
On bread, with nothing but salt.
In a dressing, where the bitterness balances vinegar and the pepper does the work of mustard.
Drizzled over soup, hummus, burrata or roasted vegetables after they come out of the oven.

You can absolutely cook with it — good olive oil is more heat-stable than its reputation suggests, precisely because of those polyphenols — but you will be burning off what makes this bottle worth its price. Keep a cheaper oil for the pan.

Looking after it

Light, heat, air and time are the four things that kill olive oil, and the shelf above the cooker manages three of them at once. Keep it in a cupboard, away from the hob, tightly closed, and finish it within a couple of months of opening. Cloudiness or solidifying in a cold kitchen is normal and reverses at room temperature — it is not a fault.

What early harvest actually means
The olives are picked while still green rather than left to ripen black. The yield is much lower — fewer litres from the same trees — which is why early-harvest oil costs more. What you get for that is a far greener, more bitter, more peppery oil with a much higher polyphenol content, and one that keeps better because those same polyphenols slow oxidation.

The peppery catch at the back of the throat
That is oleocanthal, and it is a mark of quality rather than a fault. A fresh, well-made, high-polyphenol oil makes you cough slightly. A supermarket oil that goes down smooth and tastes of nothing much is telling you something too.

How to store it — this is where most oil is ruined
Heat, light and air are the three enemies, and a bottle on the counter beside the hob meets all three. Keep it in a cupboard, tightly closed, away from the cooker. Buy a size you will use within a few months rather than a large tin that sits open half the year.

Does it go in the fridge? No — it will cloud and solidify, which does no harm but makes it unusable without warming.

Using it
Raw is where an oil like this earns its price: over tomatoes, on bread, on grilled fish, stirred into soup or beans at the table, over ice cream with sea salt if you want to surprise someone. You can cook with extra virgin oil — the notion that it cannot take heat is overstated — but heat destroys the very aromatics you paid for, so use an everyday oil for frying and keep this for finishing.

One authorised claim worth knowing
Olive oil polyphenols carry one of the very few authorised EU health claims in this whole category, at 5 mg of hydroxytyrosol and its derivatives per 20 g of oil. Check the label to see whether this oil declares it.

Harvest date beats best-before
If the bottle carries a harvest date, that is the number that matters. Olive oil does not improve with age.
